Shrimp with Creamy Tomato Basil Sauce
A creamy basil stew with shrimp, parsley, basil, and a bit of Cajun spice. Perfect with some Fried Green Tomatoes.
Salmon Fried Rice
We hadn't made fried rice in a while, and we both had a hankering for it, so I decided to make some. And then I went for Salmon Fried Rice since it was Saturday - seafood day. Two birds and all, right? I know last time, I said Fried Rice is good for using up ALL the things. However, it's also good when the refrigerator's empty. Just some eggs, rice, and mixed frozen vegetables, and you're good to go! (And in this case, salmon. Because you know, Salmon Fried Rice. A quick and enjoyable meal. Only thing I forgot was adding a bit of leftover bok choy into the mix. Yummy!

Sesame Crusted Tuna
We recently saw some tuna steaks for sale, and since we'd never purchased any before, we decided to make an exploratory purchase. The first thing we wanted to try? Sesame Crusted Tuna Steaks! Making these steaks was pretty easy too. I thought I'd need to dredge the tuna in something before searing, but the tuna does a surprisingly good job of keeping the sesame seeds stuck. All you've got to do is press them into the tuna slightly if you feel like it. Even without pressing the sesame seeds into the tuna, the vast majority of the seeds will stay stuck. As part of this meal, I also made a ginger carrot topping or dressing. Feel free to serve it on the side, on top, as a dip, or not at all! Although, if you decide to leave it out, I would recommend mixing the other ingredients and using it as a sauce so you'll have a more flavorful tuna. :) Give this Sesame Crusted Tuna a try and surprise yourself with how easy it is to make!

Miso Butter Shrimp
It's that time again - SRC time! As part of the Secret Recipe Club, we're assigned another blogger each month, and we get to pick a recipe from their blog to make. This month, I got Well Dined, and Sarah's definitely got a plethora of recipes to choose from! After browsing through many, many scrumptious recipes, I found one i just had to make - miso butter. I'm a fan of miso, but it's been pushed to the back of the fridge over time, and this recipe's definitely a great reason to pull it out again. Plus, like compound butter, it's so versatile and can be adapted to many uses - ranging from a spread on toast to cooking seafood in, and everything in between. For this recipe, I used only shiro, or white, miso, and we really enjoyed it. However, I'm thinking it'd taste even yummier with a bit of red, or aka miso mixed in. Maybe even gochujang! I also whipped the butter instead of just mixing it in since I also wanted to use it as a spread. We're also fans of whipped butter, especially as a spread, and it's less calorically dense and has a lighter texture. :)

3. Heat approximately 1.5 tablespoons of the miso butter in a pan. (Keep in mind, the butter will melt, but the miso won't, so it'll still look a bit foamy or bubbly when it's heated enough.) |

4. Add in shrimp, and cook for about 5 minutes, or until shrimp are done. |
Caramelized Salmon
We usually try to eat seafood of some sort at least twice a week or so. If I'm running short on time or just behind in general (often), I'll just throw together something quick and easy - like garlic salmon. However, James got tired of our usual and requested something different. I thought about how I could make something different without needing unique ingredients or lots of prep or time. I thought about my options, but I kept coming back to caramelization. It's such a great way to bring additional yumminess to a dish! However, I sure didn't want to make some caramelized onions! They sure are yummy, but definitely not quick. I also wasn't sure about making some sweet salmon. Maybe something sweetly savory, but sweet salmon just doesn't work in my mind. So now I had sugar for caramelization, some salt for the savory, and I also threw in some pepper for good measure. :) In the end, we got a sweetly savory caramelized salmon on the table in less than thirty minutes! Is it as quick and easy as our usual garlic baked salmon? No. However, this caramelized salmon provides some scrumptious variety without taking very long or requiring any odd ingredients (just salt, sugar, pepper, and salmon). Now I'm thinking I need to make a big batch of caramelized onions and serve up this caramelized salmon with some caramelized onions! YUM!
