
You know those times when you've got to get something on the table, but you're got too much going on (or you just want a break)? Lately, I've found shrimp rescuing me. Shrimp cook so quickly and easily, you'll get this dish on the table without much time in the kitchen. (Of course you don't have to let your guests know how long it took (or didn't take). It'll be our little secret. OK?)

Shrimp Scampi
by CJ HuangShrimp, cooked with garlicky butter and herbs in a white wine sauce for a quick and easy (yet impressive) shrimp scampi. (Thrown in some spinach too, if you'd like!)

1. Gather all materials. |

2. Combine parsley, oregano, white wine, lemon, and shrimp. |

3. Meanwhile, melt butter and heat garlic until fragrant. |

4. Add shrimp mixture and cook until done. Meanwhile, cook pasta following package instructions. |

5. Toss drained pasta into pot with shrimp, making sure pasta is well coated. |

6. Throw in some spinach and cook using carryover heat if desired. |
I've been finding the same this lately... that there's little time to cook and shrimp (and pasta) is just the right thing to whip up for dinner. I'll definitely be saving this recipe! Delicious!
