
For a month, we tried the "no added sweeteners" diet, and since we'd gotten back into the habit of snacking, I thought I could make something snacky. I know I'm always hearing how they put sugar in everything, but it never occurred to me how it really is everything. Fortunately, I'm able to make most of our food at home, since the few items we wanted to buy, we had a hard time finding. I'd made something similar to these soy nuts with edamame before, so this time, I thought I'd try with regular soy beans. I really liked the crunch these soy nuts provided. I also decided to add in some nutritional yeast for some cheesy flavor since I'm currently dairy free as well. Although they do take a while to make, the cooking time is passive, and you can make a large batch at once. You can also try different flavorings and see what you like. :)

1. Gather all materials. |

2. Combine all materials, making sure soy beans are well coated. |

3. Bake at 350F for 30 minutes, or until soy nuts crispy. Stir part way through for more uniform baking. |
