Mexican Cotija Corn

Back when I worked at a chromatography company, I went to a tapas restaurant for lunch, and had some Mexican Corn. Unfortunately, I can remember neither the restaurant name nor the location anymore. However, I do remember the delectably yummy and flavorful Mexican Corn on the Cob. (We recently went to another restaurant, and I believe this corn is also called Elote.) Since we'd purchased some corn on sale, I thought back to the scrumptious corn I enjoyed back in what seems like another lifetime. I made this Mexican Cotija Corn in a oven, and it'll taste even better if you make it on a grill. The hardest part of making this corn was getting it to stay submerged while soaking - they just want to roll and float! I ended up using a rice cooker pot partially filled with water on top of a plate to keep the corn down. So once you've soaked the corn, drain and roast it. (Unless you're lucky and have access to a grill. Then grill the corn.) :) Once the corn's cooked, slather it with some Chipotle Mayo and roll it in some Cotija cheese. Then it's time for the best part - gobbling!

Chipotle Mayo

Ever wanted a simple way to add some smoky chipotle flavor without a lot of hassle? This flavorful chipotle mayonnaise is sure to satisfy! For the super easy version, simply mix chipotle with mayo. Done.

However, I wanted a few extra layers of flavor, so I also used some garlic, lime, and cilantro. If you're going to use only one extra, I'd recommend the garlic. The lime juice adds a nice tang, and the cilantro just rounds it all out. This condiment's totally versatile too! It's perfect with potato wedges and fries, especially sweet potato fries. The sweet and spicy's just splendid. You could also use it to jazz up a sandwich or add it to some Mexican corn salad. Yummy yum yum!

1 tablespoon chipotle chilies in adobo sauce I just used some of the sauce. If you use the chilies, you'll want to mash it pretty well or use a food processor.
1 teaspoon cilantro
1/2 tablespoon lime juice

After making some mayo, I thought we could use it to make some Buttermilk Ranch Dressing. I started with these two recipes, and then modified as I went. Making this dressing doesn't take long at all. In fact, it was quite fast compared to making mayo. The only thing that took me a while was tweaking the flavor. Sure, the initial attempt turned out decent enough, but I wanted to just tweak it a little bit. Then I started wondering " What if...." What if I tried a bit of lime? What if I added some mustard? What about some pepper? Do you do that too? Tell me I'm not the only one!

Note: If you're using dried herbs and flavorings, it might take a little longer to achieve your final flavor. I'd recommend letting the dressing sit in your refrigerator overnight to allow all the flavors time to come out and introduce themselves.
