It's time again! Each month, as part of the Secret Recipe Club, we're (secretly) assigned another blogger, and we get to pick a recipe of theirs to make. This month, I got Renee's Kitchen Adventures. She's certainly got lots of yumminess going on, and I had some difficulty selecting a recipe! Did I want Chicken and Dumplings, Mozzarella Stuffed Meatballs, or Hummingbird Cupcakes?

Well, it turns out, I decided to try Two-Ingredient Pancakes. I'd heard about these pancakes before, especially as I was researching Paleo. However, I never gave them a try since I wasn't sure how they'd turn out, and I'm not really a huge fan of banana. (Plus, I keep some DIY Bisquick around in case I need a quick pancake fix!) I modified the recipe slightly since I wanted to use regular eggs instead of eggbeaters.

After trying them, I was a bit surprised at the taste. There's really not a whole lot of banana flavor. Pretty surprising, especially since half the ingredients are - you guessed it! Bananas. The texture also surprised me a bit when I was making them. After hitting the pan, the pancakes would rise a bit, like regular pancakes. However, after taking them off the heat, they do tend to deflate a bit - kinda like when you take a Dutch Baby out of the oven, but not as drastically. :) Do these two-ingredient pancakes taste exactly like regular pancakes? No. Do these two-ingredient pancakes taste yummy? Yes! I could definitely recommend them, and they're tasty, as long as you're not expecting them to be exactly like standard pancakes. :)

Double Banana Bread

Although I've made banana bread before, I don't think I'd
ever put granola or cereal into the batter before. As fate would have
it, I needed to use up some bananas and we ran out of the creamed corn cornbread we had been eating around the same time. Since I
planned on eating this bread for breakfast, I wanted it to be a bit
more substantive, and thus, I added in some granola. If you're
diligent, you can certainly make your own granola, but I happened to
have some granola and cereal around, so I used it! Plus, you'd have
to plan ahead and make sure you had the granola beforehand. Let's just
be honest here - I'm no good at that! If I had tried to make the
granola beforehand, only crumbs would be left by the time I got around
to making this bread.


Anyway, back on topic - bananas. They're filled with all sorts of
nutrients
, and you've got both the standard mashed
bananas as well as some banana chips in this bread. Throw in some
granola for more texture and some on top for a toasty crunch, and you've
got a banana bread loaded with flavor and texture. It'll look and
taste great, but it doesn't require much extra time or effort -
perfect for breakfast or a midnight snack! Out of the banana breads I've made so far, I think this one is my favorite - you just can't beat the flavor and texture!

  • 1 teaspoon


    baking soda


  • 1/4 teaspoon

    banana chips
    , chopped


  • 2 cups


    cereal or granola
    (I used granola and cereal.)


  • 1/3 cup


    granola


Methods:

  • Form Dry Team by combining flour, baking soda, salt, banana chips, and
    2 cups granola.

  • Form Wet Team by recruiting sugar, oil, buttermilk, bananas, and an egg.

  • Mix Wet and Dry Teams.

  • Pour into buttered loaf pan.

  • Sprinkle 1/3 cup granola on top. (Optionally, you can gently pat the
    granola into the batter for more sticking power. I didn't.)

Banana Chips

Most everyone has had banana chips, but did you know how simple they are to make? They're as easy as bagel chips, sun dried tomatoes, or tortilla chips! All surprisingly easy simple foods made using similar methods. You just need to slice up a banana and let it sit in the oven for a bit. If you have a gas oven, there's no need to even turn it on - the heat from the pilot light is enough, although depending on the temperature/humidity, it may take longer.

As far as bananas go, they're just about one of the cheapest fruits you can buy. However, it wasn't always that way. When bananas were first introduced in the US, they went for around an hour's wage - each! In the US, they're also the most popular fruit, beating out both apples and oranges - combined. In fact, the average American consumes more than 28 pounds of bananas in a year. Fortunately, each stem of a banana plant can produce approximately 7-14 hands, each with about 12-20 individual bananas!

Bananas also have a high level of potassium, which combined with low sodium, may reduce the risk of hypertension and stroke. In addition, bananas have lots of fiber, which may reduce the risk of heart disease. Throw in Vitamins A, B6, and C for immune support, healing, red blood cell formation, and central nervous system function, among many other nutrients, and you can see that bananas are full of nutrients, all while maintaining a sodium, cholesterol, and fat free existence!



Banana Chips by

An easy way to make your own banana chips.

Materials:
  • 2 bananas, sliced
  • oil (optional)
Methods:
  1. Place banana slices in a single layer on a baking tray (optional - spray with a little oil) or Sil-Pat.
  2. Place in warm oven until dehydrated. If you're using a gas oven, the pilot light should be enough. If you're using an electric oven, turn it to the lowest setting.
  3. Remove banana chips from oven and eat!

Basic Banana Bread

We had a few bananas that were turning brown, so I thought I would make some banana bread and kill 2 birds with 1 stone. I'd use up the bananas and not have to worry about what to eat for breakfast. I only used a half cup of sugar for the entire loaf, so there's no need to feel guilty about eating too much sugar at breakfast either! Sounds like a win to me! I started off with these recipes, but then made some modifications. Since I had already gotten started by the time I realized I only had about 2 tablespoons of butter, I only used 2 tablespoons (minus what I used to grease the pan). We had also finished off all our plain yogurt. I know you're supposed to keep some for the next batch, but we're going out of town for a few weeks in a bit, so I figured we could just eat it all now, and then I could start again when we got back. I've also been thinking about making coconut milk yogurt instead, so we'll see. Anyway - back to the recipe. Since I didn't have any yogurt, I substituted milk (and added a bit more to help with the moisture). This banana bread was quite simple, and it was also very forgiving of my edits. Give it a try and see what you think!

1/2 teaspoon salt
1/2-1 cup sugar
2 tablespoons butter
2 large eggs
1.5 cups mashed bananas
1/2 cup milk
2 teaspoons vanilla extract
2 tablespoons brown sugar


Methods:

  1. Combine flour, baking soda, and salt, forming the dry team.
  2. Mix together eggs, sugar, and butter, and then blend together with bananas, milk, and vanilla until homogeneous, forming the wet team.
  3. Add dry team to wet team, and mix until just moist.
  4. Pour into greased loaf pan and bake at 350F until knife/toothpick inserted in center comes out clean.

Oatmeal Pancakes with Banana and Walnuts

One thing I like about Saturday mornings is having a longer time for breakfast (or brunch, depending on when we get up). That extra time allows us to make something slightly more complex than oatmeal, our weekday standard. :) Although this breakfast isn't too much more complex than oatmeal, especially if you already have instant flour mix, it does provide a bit of variety. If you don't have any instant flour mix, it'll only take a minute more! In addition, it incorporates walnuts, which contain omega-3 fatty acids, with their many health benefits, and bananas, which also have their own health benefits. I opted to make plain pancakes and then top with walnuts and bananas, and then pour maple syrup on top this time, but I think next time, I would go ahead and mix in the walnuts and potentially the banana with the batter. However, keeping them separate until you're about to eat them allows for the most flexibility, which is good if you've got picky eaters. It might also be fun to allow everyone to top their own pancakes and use as much (or little) as they'd like. With these tasty (and healthy) pancakes, breakfast is sure to be a hit! You could even make more and freeze them for later (if they don't get eaten first).

1/2 cup oatmeal
1.25 cups milk

bananas, sliced
walnuts, chopped
maple syrup


Methods:

  1. Combine instant flour mix, oats, milk, and eggs and mix until homogeneous.
  2. Pour 1/4 cup batter onto heated and greased pan. When edges are done, flip over and cook on other side until golden brown.
  3. Serve with walnuts, bananas, and syrup.

Easy Banana Bread

Banana bread seems to be one of those things where everyone has their own recipe. This recipe is one that I got by combining a variety of recipes I found online. I knew I had about 4 cups of bananas, so I started at that point. While nothing's wrong with banana bread varieties, I wanted something where bananas starred, center stage. As always, something quick and easy is desired.

The aroma of this banana bread wafting through the apartment made me want to eat some right then, and I almost burned myself eating a slice before it had cooled enough. A nice crisp crust formed around the moist and dense insides. It was delicious! I didn't even realize that I didn't add any other flavors (like cinnamon, nutmeg, vanilla, etc.) to the bread until I started typing the recipe. This banana bread is uncompromised banana flavor! And since it's a quick bread, it doesn't take long to make either!

  4. Pour into buttered loaf pans and bake at 350F until crust is golden brown and toothpick inserted in middle comes out clean. I like to use a knife instead of a toothpick, but that's mostly because I'm lazy. :)
