
After cutting the pineapple for the pineapple cutting tutorial I wrote a while back, I needed to make something with the pineapple since I'm not actually a fan of eating fresh pineapple plain. I thought about how I also like coconut and piƱa colada, so combined with the weather lately, some pineapple coconut popsicles were in order! We enjoyed the creaminess of the coconut milk and the sweetness of the pineapple. You might want to add a bit of sweetener depending on how sweet your pineapple is. I opted to leave out the sweetner since our pineapple was sweet enough already. :)
