James had been requesting chicken strips for a while now, and since we had some extra chicken breasts, I thought I'd go ahead and make some! Now, you know me - I can't just make your regular chicken strips. I used this recipe from Mark's Daily Apple as inspiration. Instead of the usual flour/bread crumb coating, I opted for more flavorful and crunchy chopped peanuts. The peanuts got me thinking about Southeast Asian flavors. Peanuts, ginger, cilantro, lime, etc. So I beat some cilantro into the egg and added some lime and ginger into the sauce. For some extra peanutty flavor, you can also add a tablespoon or so of creamy peanut butter into the sauce. We both really enjoyed these Nutty Asian Chicken Strips, and hopefully you will too!

I baked these chicken strips, but you could also make them in an air fryer for extra crispiness. :)

What are some of your favorite Asian flavors?
