It's time for Secret Recipe Club again! Each month, we're assigned another blogger to select a recipe from. This month, I got Secrets from the Cookie Princess. Initially, I was a bit nervous since we don't usually make or eat cookies. However, looking through the recipe selection, I saw things like chicken corn chili, lemon bars, and one of the few cookies we do eat, Oreos. Ultimately, I chose to make the apple crisp. Overall, we liked the flavors of the crisp. I used a Pink Lady and a Granny Smith apple since we like those flavors. If I make this Apple Crisp again, I'd definitely chop the apples much smaller and make a lot more topping. (Changes reflected in the materials chart but not images.) Chopping the apples into smaller pieces allows for more appley goodness in every bite. I used a bit more than half the topping called for when I made a third of the actual filling, and both James and I wanted significantly more crust. Even using a third of the apples called for in the original recipe, we had enough apples for two 8 x 5 inch baking containers. I think it would all fit into one with smaller apple pieces. However, since I had enough for two, I decided to try both the methods mentioned and see if we could compare Colleen's experiences with baking and microwaving, and I have to say, we definitely liked the crispy baked edges better. :)

Materials:

511 grams 18 ounces 2 apples, chopped I used a Pink Lady and a Granny Smith. I sliced each apple into 20 slices, but I would recommend actually chopping them up.
60 grams 1/2 cup flour
42 grams 1.5 ounces 1/4 cup brown sugar
40 grams 1.5 ounces 1/2 cup oatmeal
1/8 cup butter, at ambient temperature
3 grams 1 teaspoon cinnamon

Methods:

  1. Gather all materials.
  2. Sprinkle cinnamon over apples and shake to cover all surfaces. I'd recommend chopping the apples instead of using slices as shown.
  3. Mash together flour, brown sugar, oatmeal, and butter. I just used a fork.
  4. Layer apples and then topping in a baking container. Bake at 350F for approximately 20 minutes or microwave approximately 10 minutes.

  3. Apple crisp is one of my favorite desserts! I love it with a scoop of vanilla bean ice cream with a drizzle of caramel sauce! Great SRC choice!

  4. So glad you like this! The great microwave vs oven debate in my house is always a struggle. My husband just isnt' patient enough to wait for those crunchy bits of crust!

    1. I guess you'll just have to leave him to his microwaved version and you get the tasty crispy version! :P I wonder if it would get more crispy in the microwave if you microwaved just the crispy part and then sprinkled it on top. Or maybe just baking the crispy part might make it faster?
