I knew we'd eat this bread for breakfast, so it needed some substance. I thought about the Double Banana Bread, but I felt like something a bit more nutty this time around. I settled on walnuts, which have a higher total antioxidant content. Walnuts and walnut oil also prepare the body to deal with stress better, and who isn't at least a bit stressed these days? On top of all that, walnuts can help improve the use of body fat by increasing the amount of fat burned relative to the amount of carbs burned. I don't know about you, but I'll certainly use all the help I can get, especially this time of year!

Materials:

1/4 cup butter
1 cup buttermilk
1 egg
3 bananas
2 cups flour I used half whole wheat and half white.
1 teaspoon baking soda
1 cup walnuts, chopped Coffee grinder's a quick and easy way.
1/8 cup oatmeal optional

Methods:

  1. Gather all materials.
  2. Form Wet Team by combining butter, bananas, buttermilk, and egg.
  3. Form Dry Team by mixing flours, baking soda, and walnuts.
  4. Beat Wet Team into a homogeneous mixture.
  5. Add Dry Team to Wet Team.
  6. Mix until barely combined.
  7. Pour batter into greased loaf pan.
  8. Top with oatmeal if desired. Bake at 350F until done, approximately 50 minutes.
