Since we're trying to increase the amount of seafood we eat, I'm always on the lookout for quick and tasty eats, and of course, since it was Saturday, I also wanted to use up the various odds and ends we had around. Looking around, I saw some grape tomatoes and collard greens nearing their ends. Maybe a quick shrimp dish with pasta? Pasta's usually pretty quick. And so a dish began forming. I could cook up some onion and garlic for flavor, throw in the greens, and then tomatoes and shrimp! Quick and easy, not to mention tasty. :) You could also substitute spinach for the collard greens - just throw them in at the end. Hope you enjoy!

Materials:

2 tablespoons garlic, minced
4 cups greens
1 onion, diced
3-4 ounces 2 servings pasta
1/2 pound shrimp, cleaned
1 pint grape tomatoes, halved
1/4 cup white wine

Methods:

  1. Gather all materials.
  2. Cook pasta following package directions.
  3. While pasta cooks, cook onion in a bit of oil, then add in remaining materials.
  4. Cook until shrimp is done. Remove from heat and mix materials with pasta.
