It's SRC time again! Each month, as part of the Secret Recipe Club, we're assigned another blogger, and we get to pick a recipe from their blog to make. This month, I got Terri at Our Good Life. Looking through her archives, I found several recipes I wanted to make - Pasta with Zucchini, Lemon, and Basil, Oat Congee with Fried Egg and Scallions (similar to this Savory Oatmeal), and Impossible Quiche all stuck out. Especially the Impossible Quiche - what a fun and challenging name! However, in the end, I chose her Slow Cooker Mojo Pork and adapted it to my pressure cooker. Definitely enjoying my decision! A scrumptiously savory aroma burst out of the pressure cooker as soon as I opened it, and the flavors were perfectly melded together! I served this Pressure Cooker Mojo Pork on rice. You could also use it in tacos (or taquitos), burritos, or just straight out of the pot! :)

Yield: 4-6 servings

Materials:

Mass Weight Volume Number Material Notes
2 pounds pork butt
1/2 cup veggie broth
2 tablespoons lime juice
1 onion, diced
2 teaspoons 4 cloves garlic I used 1 teaspoon dried and one teaspoon minced.
1 teaspoon oregano
2 teaspoons pepper
pinch cumin
1 teaspoon smoked paprika
2 bay leaves

Methods:

  1. Gather all materials.
  2. Combine all materials except pork, bay leaves, and onion. Mix together.
  3. Place pork, bay leaves, and onions in pressure cooker. I added the lime juice directly to the pressure cooker. You could do the same or add it to the mixture from Step 2.
  4. Pour in mixture from Step 2, and pressure cook for 45 minutes, using the slow release. Shred pork before serving.

  4. I have used a pressure cooker for canning but have never made a meal in one. Mine is pretty large so I don't know if it would work for a small dinner. This mojo sounds fabulous though.

    1. I used a 6 quart one. As long as you have enough liquid covering the bottom, I think you should be good. I might have to try canning with mine next! :)

  9. I use to use my pressure cooker all the time. I used it so much, it died. I never replaced it but have often thought about getting a new one. Your mojo pork looks yummy.
