One of my mother in law's favorite treats is key lime pie, and since we were planning to get together, I thought I could make something similar for her. However, with her birthday being in the summer, I wasn't really wanting to heat up the entire apartment by turning on the oven. Then, I thought about incorporating the sweetly tart flavor of limes and condensed milk in these mini key lime mousse pies. She'd get the flavors she loves, and I get to keep the apartment cool. Or at least not as sweltering. Win-win!

Materials:

Mass Weight Volume Number Material Notes
73 grams 2.675 ounces 5 tablespoons lime juice
458 grams 16.25 ounces 2 cups heavy cream
396 grams 14 ounces 1 can sweetened condensed milk
141 grams 5 ounces 9 graham crackers
18 grams 5/8 ounces 4 teaspoons butter, melted
43 grams 1.5 ounces 3.5 tablespoons brown sugar
3 grams lime zest

Methods:

  1. Gather all materials.
  2. Whip cream.
  3. Combine lime juice, lime zest, and sweetened condensed milk.
  4. Pulse graham crackers with brown sugar.
  5. When almost finished pulsing graham crackers, pour in butter.
  6. Fold lime mixture into whipped cream.
  7. Press graham cracker crust into bottom of ramekins.
  8. Put key lime mousse on top. I piped it in to make it look nicer. :) Chill and serve.

  3. I love key lime pie and your recipe takes it to new heights. I really can't wait to try this. I don't have 12 ramekins though. I will have to find another way to serve this so it's not going to look as gorgeous as yours but hopefully it will taste as delicious!

    1. Another option might be using little bowls. You could also make a larger one, and cut before serving. :) Just as delicious either way!
