Catalina Chicken
I’m sure more than one of us has had the kind of teacher or admired mentor who abides by this one phrase, “Keep it simple, stupid.” Mine was a brilliant Ph.D. chemistry instructor in high school, a no-nonsense, straight-talking woman with a sonorous Southern accent. She was a cross between Judge Judy and your sweet, old Baptist grandma. I often find myself attempting elaborate and complex recipes, as if it increased culinary street cred or affirmed some level of mastery in the kitchen, but from time to time, I recall my chemistry teacher with arms crossed saying, “Keep it simple, stupid.” In that same spirit, I decided to tackle this chicken with something easy and tasty. You can't get much more simple than two ingredients (both of which are in the name)! :P
Catalina Chicken by Morsels of Life
A simple chicken dish with the sweet tanginess of Catalina dressing.
Prep time: 5 minutes
Cook time: 14 minutes
Total time: 15 minutes
Yield: 2 servings
Methods:
- (optional) Marinate chicken. I tried it both with and without marinating, and you could taste a difference, but it was good either way. Another option (my preferred method) is to freeze the chicken in a bag with the Catalina Dressing - less planning/thinking ahead required - just take it out and cook when you want!
- Bake at 425F until cooked through and skin crispy.
- Remember that simple can be tasty too!
Roasted Chicken with Vegetables
It has been a bit cooler these past few days, so I dared to turn on the oven. I figured if I could get about a week's supply of main dish and some sides cooked in about a hour of oven time, it would be worth it. We could eat a bit and then freeze the rest for a quick meal later. Today, I'll share probably the most efficient dish I made during my hour of oven time - Roasted Chicken with Vegetables. I know it doesn't have the most exciting name, and really, it's not complex at all, but it can provide enough food for many meals. In addition, you get a perfectly seasoned side at the same time! Those of you who know me know how much efficiency matters, and I think this dish qualifies, especially if you fill that oven. Having said all that, you could also make this Roasted Chicken with Vegetables in a slow cooker, and if that's all you're making, it's probably more efficient to do that, especially from a heat transfer perspective!

Roasted Chicken with Vegetables

| seasonings | I used paprika, pepper, chili flakes, onion powder, garlic powder, and sugar - no real measurements. You can use whatever seasonings you like. I've also used just garlic salt, and that worked well too. | ||||

Methods:
- Place vegetables in an oven safe container.
- Rub seasoning over chicken, and sprinkle chicken/vegetables with any extra seasoning.
- Place chicken over vegetables.
- Cover with aluminum foil.
- Bake at 350F until cooked.
Flatbread Pizza
After making the flatbread, I knew I had to make some flatbread pizza. The only place I regularly saw flatbread pizza was at my previous workplace, and they would sell a small piece for way too much. So now that I had my own flatbread, I was determined to make a better flatbread pizza. We decided to load up the pizza with lots of toppings so that it would be tastier and also more filling. The only complaint I have about eating flatbread pizza is that it is usually not very filling or we'd get hungry again soon after eating it. But, if you make your own, you can load up the pizza as much as you want, and then you'd be full of delicious flatbread pizza! Give this flatbread pizza a try and let me know how you like it!

Flatbread Pizza

Methods:
- Spread a thin layer of tomato paste on the flatbread.
- Place remaining materials on top of the tomato paste. Some prefer to put the cheese on first, and then layer the other toppings, while others prefer putting the cheese on at the end. I tried both, and for this flatbread pizza, I think I have to say I prefer the cheese on top approach.
- Bake until cheese melted.
Honey Lemon Chicken
Once again, it was nearing meal time, and I did not have anything prepared. Thus, I went to the kitchen and looked to see what I could make quickly and easily. Well, I didn't have much, but I did have some drumsticks and lemon. I figured that lemon and honey go together, but I wanted a bit of a different flavor, so I also added in some ginger, and I have to say, it was quite tasty! Quick, easy, and tasty - you can't go too far off target if you're got those elements!
Honey Lemon Chicken

Methods:
- Mix lemon juice, ginger, and honey together to form sauce. Taste the sauce to make sure that the flavors are well balanced.
- Marinate chicken in sauce overnight if desired. I didn't do an overnight marinade, but I did marinate for a bit in a baking dish to save on cleanup.
- Bake at 350F until cooked through, turning once about halfway through.
Chicken and Wild Rice Soup
There's nothing quite like a bowl of hot chicken soup on a cold winter day! This soup is very easy, and the only time consuming part is the prep, but if you do that ahead of time, this soup will come together in almost no time. It also tastes quite a bit better than your standard chicken soup out of a can with the extra flavors that the mirepoix brings to the table. The grains help fill it out and make for a more satisfying bowl of soup! And, like most soups, countless variations can be made, from changing the meat to going vegetarian to using different vegetables, etc.
