After buying some lemongrass, I thought back to Thai food since they regularly use lemongrass. Hot and Sour Soup is a favorite of James, and Tom Yum is the Southeast Asian version. So why not make Tom Yum Noodle Soup? Well, I think I will! This noodle soup is a bit more complex than most, but it's well worth the time and effort. Also, I minced (or tried to mince) the lemongrass. I'd recommend just chopping it up and then straining it. I actually ended up straining it, so just slicing a few times would have saved quite a bit of time compared to mincing. Same goes for ginger. I would have grated or chopped it up well. Except after "mincing" the lemongrass, I didn't feel like it. :)

1/2 cup tomatoes, diced
85 grams 1/2 cup shiitake mushrooms, sliced
184 grams 1 bell pepper, sliced
1 cup coconut milk
1 tablespoon cilantro
2 teaspoons chilies or chili pepper sauce
2 tablespoons brown sugar
1.5 ounces ginger, sliced
87 grams 1/2 cup onions, sliced
56 grams 1 carrot, sliced


Methods:

  5. I have never had hot and sour soup, but this looks delicious, CJ. It's real comfort food. I've never cooked with lemongrass, so I will definitely bear your tips in mind when I do.
