Baked Stuffed Tomatoes

Morsels of Life - Baked Stuffed Tomatoes - Easy to make tomatoes - stuffed with bacon, cheese, and green peppers.

Since I had some extra tomatoes and green peppers, I thought I'd look for some recipes that used both. When I found this recipe, I figured I'd give it a try (with the usual edits, of course). However, after making the edits, I found that I had more than enough stuffing, and I made some baked tomato dip as well. Don't you just love those recipes that can so easily be made into something else? The stuffed tomatoes would make a fun and colorful appetizer, side, or snack! It's also easy enough to make for a small crowd.

What's your favorite 2 for 1 recipe?
