Morsels of Life - Falafel - Chickpeas, cooked and then processed with garlic, onions, and many delectable herbs, formed into patties, and then baked into flavorful falafel.

We'd recently gone to a Mediterranean restaurant, and Bobert went crazy over their falafel. I thought I'd make him some baked falafel since he loved it so much and chickpeas have such a dense nutrient profile - with lots of protein, fiber, folate, and minerals. Bobert relished this baked falafel, and he kept asking for more, especially when he saw us eating it too. Little guy does not like getting left out! Bobert scarfed these falafel plain, and we enjoyed dipping these falafel in some tahini dip. Either way's yummy! :)

Materials:

30 grams 1 ounce 1 cup parsley
414 grams 14.675 ounces 4 onions, diced
4 teaspoons 4 cloves garlic, minced
1 teaspoon cumin
1 teaspoon cilantro
1 teaspoon pepper
1 teaspoon salt
1 teaspoon chili pepper flakes
1 teaspoon baking powder


Methods:

  1. I am going to have to give these a try. I went crazy buying a bunch of chickpeas recently with no real vision for what I was going to do with them. So my pantry is full and I am excited to find ideas. I have never had falafel, but I can imagine we will all love them!

  3. What if I used canned chickpeas? About how many cans is this? For dried, how long do you cook them? And, do you soak them overnight first?

  4. Such great questions!

    For canned chickpeas, I'm guessing it'd be about 3 cans since each can is usually around 2 cups cooked, and they usually increase 3x in volume and I used 2 cups dried to start. :)

    For the dried ones, I just cooked them until they were pretty soft, maybe an hour or so on the stove. You could also use a slow cooker for a few hours or a pressure cooker for around 15 minutes or so.

    I did soak them overnight since it makes them easier to digest and also allows for a shorter cook time.
