You know those times when you've got to get something on the table, but you're got too much going on (or you just want a break)? Lately, I've found shrimp rescuing me. Shrimp cook so quickly and easily, you'll get this dish on the table without much time in the kitchen. (Of course you don't have to let your guests know how long it took (or didn't take). It'll be our little secret. OK?)

Materials:

1 tablespoon parsley
1 tablespoon oregano
1/4 cup white wine
2 tablespoons lemon juice
1 tablespoon 3 cloves garlic, minced
1 pound shrimp, cleaned
1 tablespoon butter
8 ounces 4 servings pasta
16 ounces spinach

Methods:

  1. Gather all materials.
  2. Combine parsley, oregano, white wine, lemon, and shrimp.
  3. Meanwhile, melt butter and heat garlic until fragrant.
  4. Add shrimp mixture and cook until done. Meanwhile, cook pasta following package instructions.
  5. Toss drained pasta into pot with shrimp, making sure pasta is well coated.
  6. Throw in some spinach and cook using carryover heat if desired.
