I've made Slow Cooker Rotisserie Chicken before, and it's definitely tender and flavorful. However, James wanted something with a bit of BBQ flavor. I wanted something easy and tasty. So why not make a slow cooker BBQ chicken? Now, before any purists come at me, I know this chicken isn't "authentic BBQ." However, it does have a bit of BBQ flavor, and it is super easy, flavorful, and tender chicken. Plus, since you're cooking it on a bed of sweet potatoes, you're making your main dish and a side at the same time! The sweet potatoes come out so flavorful from cooking in the juices and seasonings. It's almost like a healthier, tastier version of candied yams. Another plus? The sweet potatoes keep the chicken from getting too soggy on the bottom of the pot. :)

What are some of your favorite one pot meals?

Going to have to try this one. Though I might miss the crispy skin I like the idea of sweet potatoes and the seasonings. Thanks for the idea.

    1. You're missing out! It's one of my favorite lazy meals - just throw everything in there, and then take it out to eat. :) You can also use the leftover liquids as broth!

    1. I love it! You get at least a meal or two plus stock, and in this case, a side - all in one pot. And the pot did all the cooking. :)
