With all this cold, dreary weather, we wanted some thick, warm soup! And due to my (lack of) planning, we only had potatoes, onions, and squash available. I opted out of the squash because I didn't want to go through the process of peeling and removing the seeds. (Does it mean I'm lazy - or just weird since I did go through the effort of cutting the potatoes pretty small?) I cut up some onions and potatoes and boiled them along with some celery. Thinking about it, you don't really need to cut the taters so small since you can just run them through a blender. Once you get the potatoes cooked, just melt in some cheese, then sprinkle on some cheese, bacon, and green onions, and you're good to go! I think this soup would taste even better with some carrots thrown in too, but you'd lose the whiteness of the soup.

Materials:

1 onion, diced
1/2 cup celery
water or stock
3 tablespoons flour
1 cup milk
2 tablespoons 2 strips bacon, crisped and crumbled or bacon bits
