It's time for SRC again! Each month, we're paired with another blogger, and we get to select a recipe from their blog to make. This month, I got A Spoonful of Thyme. Lots of options! I was going between Vermont cheddar bread, beef stroganoff, and the devils on horseback when I finally selected Corn Fritters. I thought back to the Zucchini Fritters I'd made before, and we had a few pounds of corn to use. My version of these corn fritters are a bit different from the original. I used frozen (thawed) corn, whole wheat flour, no jalapeno, and kept the corn as whole kernels. Cajun seasoning would be great on these fritters too! Try them and see what you think. :)

Materials:

120 grams 1 cup flour
3/4 cup milk
1 egg
1 teaspoon baking powder

  4. My daughter will be pleased that you selected one of her recipes from the blog! They were delicious and I like your idea of using whole kernels.....it would be hard for me to give up the jalapeno but the Cajun seasoning sounds like a great idea so I just might have to do it! Great SRC selection.

  6. I love corn fritters but hardly ever make them as my husband can't stand corn. By chance he's away this week and so this is going to be another meal for me and my daughter! I always try to make things he doesn't like when he's not there.

  7. My favorite type of fritter is apple! I've never tried corn fritters - they sound really fun. I'd have to add the jalepenos for my husband - he loves them in everything. :)

  11. Your daughter should be proud of her recipe! We liked the extra texture of the whole kernels. However, I liked how much fluffier yours were with the puree. Maybe with creamed corn next time? :)

  15. My sister and I had conch fritters on a spring break trip to Florida many moons ago. I don't know if they are my favorite, but I say they are simply because it was such a good memory. Your corn fritters look pretty good too!
