I'm always on the lookout for quick and easy meal options, and this spicy Apricot Chicken certain qualifies. I actually "marinated" the chicken for a bit since I thought we were out of cooked meals, but we actually still had some left. However, since I didn't plan on marinating, I used another trick to get more flavor into the chicken quickly - stuffing some some of the sauce/paste under the chicken skin. I'm not sure where I first saw the hint, but it's certainly a good one to have if you're always making food at the last minute or don't plan ahead enough to allow time for marinating. I know I'm in that boat far too often, but let's just call it learning efficiency! This spicy apricot chicken actually reminds me of the Firecracker Shrimp a bit. The main difference between the two is the Firecracker Shrimp uses a bit of soy sauce, whereas this spicy apricot chicken uses lime juice. I'm sure you could switch up the sauces and still get delicious results with either combination!

Materials:

2 tablespoons chili flakes I used gochugaru.

Methods:

  1. Gather all materials.
  2. Combine all materials except chicken, and mix into a paste.
  3. Coat chicken in sauce, stuffing some under the skin for additional flavor.
  4. Cook chicken. I'd recommend grilling or baking. I used a grill.
