Double Banana Bread



Morsels of Life - Double Banana Bread


Although I've made banana bread before, I don't think I'd
ever put granola or cereal into the batter before. As fate would have
it, I needed to use up some bananas and we ran out of the creamed corn cornbread we had been eating around the same time. Since I
planned on eating this bread for breakfast, I wanted it to be a bit
more substantive, and thus, I added in some granola. If you're
diligent, you can certainly make your own granola, but I happened to
have some granola and cereal around, so I used it! Plus, you'd have
to plan ahead and make sure you had the granola beforehand. Let's just
be honest here - I'm no good at that! If I had tried to make the
granola beforehand, only crumbs would be left by the time I got around
to making this bread.


Anyway, back on topic - bananas. They're filled with all sorts of
nutrients
, and you've got both the standard mashed
bananas as well as some banana chips in this bread. Throw in some
granola for more texture and some on top for a toasty crunch, and you've
got a banana bread loaded with flavor and texture. It'll look and
taste great, but it doesn't require much extra time or effort -
perfect for breakfast or a midnight snack! Out of the banana breads I've made so far, I think this one is my favorite - you just can't beat the flavor and texture!

Banana bread with a double dose of banana and granola in the batter, then topped with
crispy granola.

Materials:




  • 1/2 cup


    sugar


  • 1/4 cup


    oil


  • 1 cup


    buttermilk
    (or yogurt)


  • 1


    egg


  • 2


    bananas
    , mashed


  • 2 cups


    flour
    (I used half white and half wheat.)


  • 1 teaspoon


    baking soda


  • 1/4 teaspoon


    salt


  • 1 cup


    banana chips
    , chopped


  • 2 cups


    cereal or granola
    (I used granola and cereal.)


  • 1/3 cup


    granola


Methods:

  • Form Dry Team by combining flour, baking soda, salt, banana chips, and
    2 cups granola.

  • Form Wet Team by recruiting sugar, oil, buttermilk, bananas, and an egg.

  • Mix Wet and Dry Teams.

  • Pour into buttered loaf pan.

  • Sprinkle 1/3 cup granola on top. (Optionally, you can gently pat the
    granola into the batter for more sticking power. I didn't.)
