We had a bit of the caramelized onions with green peppers left, and weren't sure what we wanted to do with it. We also didn't have any breakfast food left, so we thought that the caramelized onions with green peppers would make for a really tasty omelet. The resulting omelet was indeed very tasty! It didn't take much time with the caramelized onions with green peppers already made.

- Melt the butter and spread it around the skillet.
- Beat egg to combine yolk and white.
- Pour egg onto skillet, and allow bottom to cook. The top part of the egg should still be a bit runny at this point.
- Add caramelized onions with green peppers to half the omelet, and put some cheese on top.
- Fold the omelet over.
